If you have ever watched “Jiro Dreams of Sushi” you will understand edomae style sushi and this place. If you haven’t, I recommend watching it before you go (it’s available on Netflix). This sushi house is an experience, one of the best in Vegas.
They have only 18 seats and 2 seatings a night, so reservations are recommended and advised. The fish is flown in daily from all around the world and is displayed in a glass case near the chefs. It is served slightly chilled and for the best flavor it is brushed with 5-year aged shoyu (soy-sauce) and a streak of hand-ground wasabi in the perfect ratio.
You do not use chopsticks here, you use your fingers as you would in any sushi house in Japan. They have 2 choices for meals: Omakase (the larger of the 2) and the nigiri. I suggest sitting at the front row for a view of the chefs do what I consider a work of art in their sushi making.
